Moonstruck Brut

70% Pinot Noir and 30% Pinot Gris from our estate vineyards are whole cluster pressed, cool fermented without malolactic fermentation. Using the Charmat method the Moonstruck is held 18 months en tirage and finished off in a Brut style. Our Brut shows clean, fresh delicate fruit aromas, a light toast from the yeast contact and a smooth graceful finish.

Winemaking: Special yeasts added to very well settled juice. Cool fermentation in stainless steel and barrels. 18-24 month en tirage. Aged Chardonnay dosage to brut level. Alcohol 12%, TA 7-7.5 gm/L, .9% residual sugar.
