A special blend of English Morrello, Balaton and Montmorency tart cherries. The wine is like cherry pie in a glass, however the sweetness is balanced by natural fruit acids to keep the finish from being cloying. Winemaking: Freshly harvested cherries are pressed in a Bucher pneumatic press. Fermentation is moderately cool in stainless steel tanks. Prior to bottling, fresh juice is added back for an extra dimension of fruit and sweetness. Alcohol 10.5%, TA 9-9.5gm/L, 7% residual sugar. Retail price $7.25 per bottle/$73.95 cs.
