Our pinot noir blocks are planted with six different clones of pinot noir on C3309 and SO4 rootstocks. The fruit is pumped as whole destemmed berries into our rotovat and undergoes a traditional fermentation of the skins. The wine has red fruit characteristics similar to raspberries, strawberries and dark sweet cherries. Aging in newer French oak softens the wine and contributes and sweet vanilla background. Winemaking: 5-6 days in a rotary fermenter. Alcohol 12.5%, TA 6-6.5gm/L, 0% residual sugar. Retail price $13.25 per bottle/$135.15 cs.
